Sweet Potatoes

Gluten Free | Nut Free | Nightshade Free

Ingredients
5 lbs sweet potatoes
1 cup water
1 cup orange juice
1 tsp vanilla extract
8 oz butter (melted or cubed)
1 cup brown sugar
1/2 tsp ground nutmeg
1/2 tbsp cinnamon
1/2 tbsp maple syrup
Topping
1/2 cup brown sugar
3-4 cups mini marshmallows
Instructions
Peel and cut sweet potatoes into 2 inch chunks.
Place sweet potatoes into crock pot with 1 cup water. Cover and cook on high for 4 hours or until sweet potatoes are easily pierced with fork.
Pre-heat oven to 375.
Drain slow cooker of water. Mash cooked sweet potatoes or leave them as chunks. Add orange juice, vanilla extract, butter, brown sugar, cinnamon, nutmeg and maple syrup.
Spread sweet potato mixture into a greased 9x13 baking dish.
Sprinkle brown sugar over mixture. Top with marshmallows.
Bake uncovered for 5 minutes or until marshmallows are puffy and lightly browned.
Notes
Sweet potatoes can be boiled on a stove rather than cooked in a crock pot.
